Handwritten contemporary bookplate "Léviston à l'École Polytechnique an 13". 7 folding tables and 23 engraved plates in fine. Some foxing. Plate 16 soiled (greyed out). Bouillon-Lagrange (1764-1844) taught chemistry at several leading scientific establishments, and in 1806 was appointed Empress Josephine's physician, then director of the École de pharmacie under the Restoration.

Strasbourg, Levrault & Paris, Barrois, sd [1799]. In-8, blond granite basane, ornate ribbed spine, gilt fillet on the edges. First edition of this heterogeneous work on milk, considered as an object of study in its own right (chemistry), or as a foodstuff with influences on the organism and utility for man (medicine), and because of its use in the production of other products (cheese and butter) as well as its role in the social organization of work (rural economy). This study was conducted as part of a competition launched by the Académie Royale de Médecine in 1788 on "the nature of woman's, cow's, goat's, donkey's, ewe's and mare's milk". The two authors differentiate between cow's, goat's and ewe's milk, rich in caseous and buttery matter, and woman's, donkey's and mare's milk, rich in serosity and essential salts.
