A RARE AND IMPORTANT CHINESE FAMILLE ROSE CHRYSANTHEMUM DISH Yongzheng mark, probably 1723-1735 D: 16.5 cm, H: 3 cm Verso a label: Tessier Serrou... 17 juiN 1923. For comparison see a dish, lot 3129, which was sold at Christie's Hongkong on November 30th, 2016. Alain.R.Truong noted on the dish auctioned at Christie's: "The current dish belongs to a very small group of finely enamelled dishes from the Yongzheng period, which are of chrysanthemum form and are painted with variously arranged flowers within a roundel to the centre. Two types of dishes from this group exist, one is molded with twenty-four lobes, which are found in two size groups, with the present dish belonging to the larger group measuring 23 cm. in diameter, and a smaller group ranging between 15.5-16.5 cm. in diameter. Only one other example in this size is known, which was sold at Christie's Hong Kong, 26 April 1998, lot 510, and may have formed a pair with the current dish. Dishes of the smaller size include a pair with almost identical composition sold at Christie's Hong Kong, 27 May 2008, lot 1546; two single dishes in the Palace Museum, Beijing, illustrated in The Complete Collection of Treasures of the Palace Museum: Porcelains with Cloisonne Enamel Decoration and Famille Rose Decoration, Hong Kong, 1999, nos. 58 and 59 (figs. 1 and 2), which have a simpler composition with only one, but larger peony in full bloom in adjacent to a half-open bud; and another in The Tianminlou Collection, illustrated in Chinese Porcelain: The S. Pleasant copy in period bindings in half basane with well-ornamented smooth spines and red morocco title-pieces and tomaisons, very slight rubbing, a small tear at the bottom of the 3rd volume, spine of the 2nd volume a little darkened but not seriously so. Well complete with the beautiful folding plate bound in-fine of volume 3, this one well preserved, with its 11 engraved figures. The interior is very fresh and free of foxing, with the exception of a brown stain on the title leaf and leaves 11-12 and 13-14 of volume 1 (and small marginal marks), which are not serious. Overall, the three volumes are in very good condition. The author was a Parisian physician, and his treatise is of great importance, particularly from the point of view of the discoveries concerning cooking methods and seasonings it presents. The work was subsequently republished under the title Le Cuisinier Royal. "The author, a doctor of frail constitution, cured himself with a very elaborate diet. A disciple of de Hecquet, he criticized French cuisine for its abundance of sauces and spices. His first attack was on cooking methods, and he proposed a well-enclosed health stove in which food was cooked, over a low wood fire and covered, in pots and kettles described in detail. More than a thousand recipes are listed in order of service. The author emphasizes light sauces and delicate, moderate seasoning. Their names often evoke Italy: à la vénitienne, à la milanaise, à la piémontaise".
