His photographs were intended to serve artists and breeders alike as records of particularly fine specimens of horses, cattle, and donkeys. They were also intended as souvenirs of rural life, and Tournachon was interested in the handlers of the animals too. Tournachon porträtierte Ende der 1850er und Anfang der 1860er Jahre die preisgekrönten Tiere bei den französischen Landwirtschaftswettbewerben. Seine Fotografien dienten Künstlern wie Züchtern gleichermaßen als Dokumente von besonders schönen Exemplaren von Pferden, Rindern und Eseln. Sie waren auch als Darstellungen des ländlichen Leben gedacht, und Tournachon interessierte sich ebenso für die Menschen, die die Tiere hielten.
