First edition of this rare work on food science. - Weiss 1970 - Hirsch/Hübotter III, 559 - Joseph Wilhelm Knoblauch (1781-1819) was a physician and professor in Leipzig. - The knowledgeable writing combines botany, zoology and chemistry with the art of cooking. Deals widely with the atmosphere (including light, heat, electricity, nitrogen, putrefaction, gravity, and elasticity), food in general, vessels, wooden tools, tinning over, copper, lead, arsenic, platinum, animal foods (including mammals, birds, fish), plants (including roots, stems, leaves, flowers, berries, seeds, poisonous fungi), and sugar, paints, water, beer, wine, vinegar, mechanical and chemical tests, minerals, etc. - The first part in 2 sections up to page 1036. The second part titled "Anleitung zur Kenntniß der unverfälschten, und Prüfung der verdächtigen Nahrungsmittel" from page 1039, but here without the title page. - Title with two old stamps, partly lightly browned.
