Aux Combottes is an exceptional premier cru surrounded on all sides by grands crus: Latricières-Chambertin to the north, Charmes-Chambertin to the east and Clos de la Roche on the Morey-Saint-Denis side, to the south-west. It takes its name from its location, at the mouth of the Combe Grisard, in a zone of geological and climatic transition between Gevrey, from which it draws its structure, and Morey, from which it takes its finesse. 1995 is the vintage of structure. After a wet and unsettled spring, the hot, dry summer encourages a gradual ripening, punctuated by a few showers in September. The harvest yields healthy, ripe grapes. The wines combine concentration, freshness and tannic structure, with a fine ageing potential. 2005 stands out as a benchmark vintage. After a long, cold winter, the contrasting spring leads to an imperfect flowering, marked by coulure and millerandage. The hot, dry and sunny summer, punctuated by saving rains in August, followed by a dry September, allows a perfect ripening and healthy grapes. The wines are distinguished by a ripe and supple tannic texture, as well as by an expression of terroir that is mineral, energetic and powerful. 2015 is a sun-drenched vintage. After a mild and wet winter, the warm and bright spring encourages a rapid and early flowering. Heat and drought set in from June, tempered by the water reserves and the summer rains, which restart the ripening through to September. 2015 is the image of a balanced vintage that brings together fruit, substance, ripe tannins and fine acidity. Its ageing potential is remarkable. Domaine Hubert Lignier will be pleased to welcome the winning bidder for a private visit of the estate, for two guests.
