Formato In-4° oblongo, media tela de percalina roja con esquinas, tapas de piel de oveja verde con una remolacha grande estampada en oro en la tapa (encuadernación del editor). Álbum histórico detallado sobre la remolacha, ilustrado con 179 láminas en negro o en color, incluida la portada, montadas en solapas y editado con motivo del centenario de la fabricación del azúcar de remolacha. Numerosas reproducciones de documentos, dibujos y fotografías extraídas de la colección de Jules Hélot (1850-1924), fabricante de azúcar. Ejemplar en muy buen estado.
