Sello seco «Bertsch y Arnaud» en la parte inferior izquierda. 15 x 17,5 cm Una rara carta de menús de principios del siglo XIX, perteneciente a las colecciones de la Biblioteca Pública de Nueva York, detalla las especialidades culinarias internacionales de este establecimiento. El Hôtel des Américains fue, desde 1765 hasta su cierre en la década de 1850, el centro neurálgico de la gastronomía europea. Su entrada se encontraba en el número 147 de la calle Saint-Honoré.
