Member restaurants were required to adhere to strict standards of hospitality and quality. The primary commitment of each restaurant owner was to keep a “signature dish”—a culinary specialty that strictly represented the gastronomic tradition of their province or region—on the menu year-round. Anyone who ordered that specific dish received a complimentary ceramic plate hand-painted by artisans from Vietri sul Mare, featuring an artistic depiction of the specialty they had enjoyed and the restaurant’s name—a true souvenir or “buon ricordo” of the evening.2) SETTECUPOLE RESTAURANT IN MILAN.
